Hazard Analysis and Critical Control Point (HACCP) is the procedure, which aims to eliminate the risk of contamination in food preparation, production and distribution.
Critical points in the production process (CCP), where a contamination hazard exists, are identified and safe limits defined. As soon as the presence of a contaminant goes above the agreed level corrective action is taken.
 

To help safeguard your kitchen, Electrolux has developed several solutions. Appliances already equipped with electronic control can simply be connected to a printer, which supplies a printed record of levels at CCP, a system known as basic Electrolux HACCP.
Other appliances may be connected to an existing HACCP system in your kitchen or installed with the Integrated Electrolux HACCP, with on-line computer monitoring of CCP throughout your kitchen.
